Savory Crusted Cod

This is my favorite fish coating yet! It would work well with any light, white fish I’d think.

IMO, it’s the perfect balance of cheese vs. seasoning flavoring.

Savory Crusted Cod Recipe

Ingredients
  • 3 (6 oz) cod filets
  • 1 egg
  • 6 Tbsp grated parmesan cheese
  • 1 1/2 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 *pinch* (1/8 tsp) freshly ground black pepper
  • 1 *pinch* (1/8 tsp) ground coriander
  • 1 *pinch* (1/8 tsp) paprika
Directions
  1. Preheat oven to 425° F.
  2. Line a baking sheet with foil.
  3. In a plate, whisk 1 egg.
  4. In a second plate, whisk together 6 Tbsp grated Parmesan, 1 1/2 tsp parsley, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/8 tsp (a large *pinch*) black pepper, 1/8 tsp (a large *pinch*) coriander, and 1/8 tsp (a large *pinch*) paprika.
  5. Pat filets dry with paper towels.
  6. Dip each filet first into beaten egg, fully coating.
  7. Allow excess to drip off, then dip into Parmesan mixture, fully coating.
  8. Place evenly spaced on baking sheet.
  9. Bake for 10 mins, until filets reach 145° F and can be flaked with a fork.
