Danish Butter Cookies

More heritage representation! I’m 1/8 Danish, but you don’t have to be en dansk kvinde to love smør cookies. Do you remember the deliciousness found inside the blue tin from Royal Dansk? Yum!

My version skips the sanding sugar often used on these cookies, but if you want to add it, simply roll your log in it just before slicing (after chilling) OR pat some on top of slices just before baking…

Smør Cookies (Danish Butter Cookies) Recipe

Ingredients
  • 2 egg yolks
  • 2 cups all purpose flour
  • 1 cup unsalted butter
  • 1/2 cup sugar
  • 2 tsp vanilla extract
  • 1/2 tsp salt
Directions
  1. In a large bowl, cream together 1 cup butter, 1/2 tsp salt, and 1/2 cup sugar until light and fluffy. This is definitely easiest w/ a stand mixer!
  2. While continuing to mix, add 2 egg yolks.
  3. Add 2 tsp vanilla extract.
  4. Add 2 cups flour, a bit at a time, and mix until just incorporated. Don’t overmix!
  5. Roll dough into a log in plastic wrap, then chill in the fridge for at least 1 hr. Place the log in the fridge gently so as to avoid flattening the bottom of the roll.
  6. Preheat oven to 350 F.
  7. Line baking sheets with parchment paper.
  8. Use a sharp knife to cut dough into 1/4″ slices and place slices on baking sheets.
  9. Bake for 12 mins, until the edges are just starting to turn a golden brown.
