Definitely keeping this one in the rotation, esp w/ summer BBQ season being ushered in.
NOTE: These can be made in advance and stored in fridge overnight then brought back to warmth before serving on the stovetop or in the IP on KEEP WARM or in the microwave
Southern BBQ Pit Baked Beans Recipe
Ingredients
- 2 cans (15 oz) Great Northern beans, drained and rinsed
- 2 cans (15.5 oz) low-sodium White/Navy beans, drained and rinsed
- 8 slices center cut bacon
- 1 red bell pepper, diced
- 1/2 yellow onion, chopped
- 3/4 cup ketchup
- 2/3 cup light brown sugar, packed
- 1/4 cup molasses
- 1 Tbsp Worcestershire sauce
- 1 Tbsp spicy brown mustard
- 1 rounded tsp minced garlic
- 1 tsp Tapatio
- 1/2 tsp freshly ground black pepper
Stovetop & Oven Directions
- Follow my Bacon Bits recipe directions to prepare bacon in a large cast iron skillet on stovetop, then transfer bacon to a plate (don’t drain on paper towels, though) and set aside.
- Preheat oven to 375◦ F.
- Without emptying skillet used for bacon, return it to stovetop over medium heat.
- Add chopped 1/2 onion and sauté until onions begin to caramelize.
- Add diced 1 bell pepper and continue to sauté until bell peppers are starting to soften.
- Add 1 rounded tsp garlic and continue to sauté for just 30 secs more.
- In a large mixing bowl combine bacon bits, onion mixture, 2 – 15 oz cans drained Great Northern beans, 2 – 15 oz cans drained White/Navy beans, 3/4 cup ketchup, 2/3 cup brown sugar, 1/4 cup molasses, 1 Tbsp Worcestershire, 1 Tbsp spicy brown mustard, 1 tsp Tapatio, and 1/2 tsp black pepper then mix well.
- Transfer bean mixture to a 9″ x 13″ baking dish and cover with foil.
- Bake for 1 hr, then uncover and back for 10 more mins.
Instant Pot Directions
- Follow my Bacon Bits recipe directions to prepare bacon in Instant Pot’s (IP) inner pot, then transfer bacon to a plate (don’t drain on paper towels, though) and set aside.
- Without emptying inner pot used for bacon, select SAUTÉ. If you’ve skipped bacon for the recipe, add 2 Tbsp EVOO to inner pot.
- Add chopped 1/2 onion and sauté until onions begin to caramelize.
- Add diced 1 bell pepper and continue to sauté until bell peppers are starting to soften.
- Add 1 rounded tsp garlic and continue to sauté for just 30 secs more.
- Add cooked bacon bits, 2 – 15 oz cans drained Great Northern beans, 2 – 15 oz cans drained White/Navy beans, 3/4 cup ketchup, 2/3 cup brown sugar, 1/4 cup molasses, 1 Tbsp Worcestershire, 1 Tbsp spicy brown mustard, 1 tsp Tapatio, and 1/2 tsp black pepper then mix well.
- Select PRESSURE COOK (or MANUAL) for 8 mins.
- When cooking cycle completes, allow a natural release until the pressure pin drops.
- Stir and serve!
