John is always so suspicious of my new recipes, but he says I can make this dinner anytime! Well, technically HE grilled the skewered pork tenderloin… 🤣

The PTL chunks were so tender and juicy! I marinated it for 10 hours in advance.

Ingredients
  • 1.5 lb pork tenderloin, cut in 1″ cubes
  • 1/3 cup extra virgin olive oil
  • 3 Tbsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tbsp dried oregano
  • 1 tsp dried crushed rosemary
  • 2.4 g (1/2 tsp) kosher salt
  • 1/2 tsp ground black pepper
Directions
  1. Place 1.5 lbs of 1″ cubed pork tenderloin into a gallon size Ziploc bag.
  2. Make marinade in a small bowl by whisking together 1/3 cup extra virgin olive oil, 3 Tbsp lemon juice, 1 tsp garlic powder, 1/2 tbsp dried oregano, 1 tsp dried crushed rosemary, 2.4 g (1/2 tsp) kosher salt, and 1/2 tsp ground black pepper.
  3. Pour marinade over PTL cubes then seal bag and marinate in fridge for at least 1 hr (up to 24 hrs).
  4. Remove from fridge 30 mins before cooking.
  5. Preheat BBQ over medium-high heat.
  6. Skewer marinated pork cube.
  7. Grill 10-15 minutes, flipping about every 3 mins, until golden brown and cooked through.
