

I initially crafted this recipe to accompany my Cream of Coconut Cake. YUM!!!
Stabilized whipped cream is versatile and sturdy, making it an excellent topping or frosting for a wide range of desserts, especially those that need to be made ahead of time or served at room temperature for a period.
TIP: 22 servings = 9 oz. container of Cool Whip – this recipe yields 24 servings and can be made in advance and refrigerated up to 24 hours.
Flavoring Suggestions
- Extracts: Add extracts (e.g. vanilla, almond, peppermint, citrus flavors) extract towards the end of whipping. Use about 1/2 tsp.
- Fruits & Zest: Gently old in citrus (e.g., lemon, lime, orange, tangerine) zest or coconut flakes after whipping.
- Powders: Stir in cocoa powder, espresso powder, freeze-dried fruit powder, or a bit of instant pudding mix before whipping.
- Spices: Add ground spices (e.g., cinnamon, cardamon, nutmeg) to the cream before whipping.

Stabilized whipped cream can be spread or piped onto cakes and cupcakes like a light, fluffy frosting.
- Layer Cakes: It provides a light alternative to buttercream and can support cake layers, particularly sponge cakes with fruit fillings (e.g., Black Forest cake).
- Cupcakes: Perfect for piping decorative swirls that hold their shape.
- Poke Cakes: Can be used as a replacement for store-bought whipped topping in recipes like Patriotic Poke Cake or Caramel Apple Poke Cake.

Stabilized Whipped Cream Recipe

Ingredients
- 3/4 tsp unflavored gelatin
- 2 1/4 tsp filtered water
- 1 1/2 cup cold heavy whipping cream
- 3 Tbsp powdered sugar – I used confectioner’s sugar
- 3/4 tsp pure vanilla extract
Directions
- Place a large mixing bowl and whisk (I use my stand mixer’s bowl and whisk attachment) in the freezer for 15 mins.
- In a small microwave-safe bowl, combine 3/4 tsp unflavored gelatin with 2 1/4 tsp filtered water and allow to gel – this will happen almost immediately.
- Microwave gelatin mixture 10 secs, until it returns to liquid form.
- Remove chilled bowl and whisk from the freezer.
- While whisking on medium-low, add 1 1/2 cup cold heavy whipping cream, 3 Tbsp powdered sugar, and 3/4 tsp pure vanilla extract until just combined.
- Wish on medium-high (you want to beat it as high as you can without splattering outside of your bowl) 1min, until soft peaks form.
- Return to medium-low speed and slowly put in liquid gelatin.
- Return to medium-high speed and beat until soft peaks form – where it is the consistency of *Cool Whip*. This happens within just a couple of mins in my stand mixer.
