Been waiting for a meal to try out my latest attempt at a sweet cornbread. Tonight’s menu called for my Turkey Chili and this was my moment. It’s definitely the best yet!
It all started with an attempt to recreate Marie Callender’s cornbread… This one is not a recreation as it’s not as soft and cake-like but it’s SO yummy!!! I make this one in a cast iron skillet… I might actually like this one better as it has a texture more like what I expect in cornbread!
NOTE: If you’ve kept up w/ your cast iron skillet seasoning, you shouldn’t need to oil it before baking. If you haven’t, give it a quick oil before preparing this recipe. If you don’t have a 10″ cast iron skillet, keep in mind that adjusting the skillet size down will increase baking time and going up will decrease it.
TIPS: Sub 3 Tbsp bacon grease for 3 Tbsp of the butter for a savory AND sweet cornbread. Yum-O!!! Increase baking time to 27 mins if you prefer your cornbread with crusty golden brown edges.
Sweet Skillet Cornbread Recipe
Ingredients
- 2 large eggs
- 1 cup all purpose flour
- 1 cup 1.5% buttermilk
- 1 cup cornmeal
- 2/3 cup sugar
- 1/2 cup unsalted butter, melted
- 1 Tbsp baking powder
- 2 tsp vanilla
- 1/2 tsp salt
Directions
- Preheat oven to 375â—¦ F.
- In a large bowl, whisk together 2/3 cup sugar and 1/2 cup melted butter.
- Add 2 eggs, 1 cup buttermilk, and 2 tsp vanilla extract, mixing until well blended.
- Slowly add 1 cup flour, 1 cup cornmeal, 1 Tbsp baking powder, and 1/2 tsp salt, continually mixing until well blended. Keep on a lower speed or even do by hand as you don’t want to create too many air bubbles.
- Pour batter into 10″ cast iron skillet. Use a rubber spatula to get it all, then to spread evenly in the skillet.
- Bake for 25 mins, until a toothpick inserted in the center comes out moist, but clean.
