Sweet & Sour Tofu Recipe

Ingredients
  • 16 oz extra firm tofu (pressed and torn into 1 1/2″ pieces)
  • 1 medium red bell pepper, chopped
  • 3 canned pineapple rings, chopped
  • 1/2 medium white onion, chopped
  • 1/4 teaspoon pink Himalayan salt
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 cup ketchup
  • 1/4 cup corn oil
  • 1/4 cup seasoned rice vinegar
  • 1/4 cup water
  • 2 tablespoons coconut aminos, divided
  • 1 1/2 teaspoon garlic powder, divided
  • 1/4 teaspoon ground black pepper
Directions
  1. In a gallon size Ziplock bag, toss together 16 oz pressed and torn tofu with 1 tbsp coconut aminos.
  2. Add 1/2 tsp garlic powder, 1/4 tsp pink Himalayan salt, 1/4 tsp ground black pepper, and 1/3 cup cornstarch then toss to thoroughly coat tofu pieces.
  3. Heat a large skillet over over medium-high heat on stovetop.
  4. Add 1/4 cup corn oil and heat.
  5. Once corn oil is hot, add coated tofu pieces, tossing to crisp on all sides, for up to 8 mins.
  6. Once tofu pieces are crisped, transfer to a paper towel-lined paper plate and set aside. I keep mine in the microwave.
  7. To same skillet, add chopped 1/2 medium white onion, chopped 3 rings of canned pineapple, and chopped medium red bell pepper.
  8. Saute 5 mins, until onion is translucent and pineapple is slightly browned.
  9. In a medium bowl, whisk together 1/2 cup granulated sugar, 1/4 cup ketchup, 1/4 cup seasoned rice vinegar, 1/4 cup water, remaining 1 Tbsp coconut aminos, and
    remaining 1 tsp garlic powder.
  10. Add sauce to onion, pineapple, and red bell pepper in skillet, then bring to a slght boil.
  11. Reduce heat to low-medium and simmer 5 mins, stirring occasionally, until sauce thickens.
  12. Add crisped tofu, stirring gently to combine.
  13. Remove from heat, then plate to serve.
