Taco Frittata

If you’ve been around me much in my life, you may have heard me say, “Tacos are life!” I kinda love them. Did ya know, they’re the perfect breakfast food?! 🌮🌮🌮

When I first had to go low carb, I thought imma never gonna have a taco again unless I’m being bad. Nope!

Lots of low carb options for tortillas at the grocery these days or I can make my own (using coconut flour for the recipe I have).

But, THIS! It doesn’t even need a tortilla since that thing is just the device for getting meaty, cheesy goodness into my mouth. I did serve with corn tortillas as my boys *need* carbs for their meal to be complete. 😁

I covered mine in sour cream and salsa for a melt-in-my-mouth party. And then I snuck a warm tortilla around some from my plate. Oh my!!! 😋😋😋

I love getting crafty w/ toppings: avocado, cilantro, salsa, sour cream, etc.

TIPS: To keep this recipe Keto and LowCarb, be sure to choose a salsa w/o added sugars! The one pictured above is NOT a keto-friendly salsa. One of these days I’ll add a keto-friendly salsa recipe…

Taco Frittata Recipe

Ingredients
  • 1 lb 80% lean ground beef
  • 4 large eggs
  • 3 Tbsp taco seasoning (see my Taco Seasoning recipe)
  • 2/3 cup heavy whipping cream
  • 1/3 cup salsa
  • 1 1/4 cup freshly shredded sharp cheddar cheese, divided (1 cup for batter + 1/4 cup for topping)
  • 1/2 tsp garlic salt
  • 1/4 tsp freshly ground black pepper
  • extra virgin olive oil (EVOO) spray
Directions
  1. Lightly spray a 9″ glass or ceramic baking dish with EVOO, then set aside.
  2. Preheat oven to 350 F.
  3. In a large skillet, brown 1 lb ground beef over medium-high heat on stovetop.
  4. Drain rendered fat.
  5. Stir in 3 Tbsp Taco seasoning.
  6. Transfer seasoned beef o baking dish.
  7. In a medium bowl, whisk together 4 eggs and 2/3 cup cream.
  8. Stir in 1/3 cup salsa, 1 cup shredded Cheddar cheese, 1/2 tsp garlic salt, and 1/4 tsp black pepper.
  9. Pour egg mixture over beef mixture.
  10. Sprinkle with remaining 1/4 cup shredded Cheddar cheese.
  11. Bake 35 – 40 mins, until center is set (knife comes out moist but clean) and top is golden brown.
  12. Remove from oven and allow to cool for 5 mins before serving.
