I kept making some version of this recipe by heart – meaning I never measured anything. I finally slowed down while making dinner the other night to jot down what I was doing. 😉

I’ve made this with a combo of yellow squash and zucchini and it was also amazing!

Thyme Yellow Squash Recipe

Ingredients
  • 1 Tbsp extra virgin olive oil (EVOO)
  • 2 medium yellow squash (about 8 oz), cut into half-moon slices 
  • 1 Tbsp dried thyme leaves
  • 1/8 tsp ground black pepper
Directions
  1. Heat a large skillet over medium-high heat on stovetop.
  2. Add 1 Tbsp extra virgin olive oil (EVOO) and heat 30 secs.
  3. Add half-moon slices from 2 (8 oz) yellow squash in as even of a single layer as possible.
  4. Sprinkle with 1 Tbsp dried thyme leaves and 1/8 tsp ground black pepper.
  5. Sauté until squash is softened to your desired consistency. We usually do about 10-15 mins.
