

Goat cheese takes this one to the next level… Yum!
TIPS: To make this a Margherita Pizza, simply leave off the Chèvre. If you prefer thin crust, you’ll need to cut back on both pizza sauce and cheese or your toppings will be too heavy for your crust.

Tomato, Basil & Chèvre Pizza Recipe

Ingredients
- 1/8 cup extra virgin olive oil (EVOO)
- 1/4 tsp pink Himalayan salt
- 1 rounded tsp minced garlic
- 1 1/2 Roma tomatoes, thinly sliced
- 6 basil leaves, cut into thin strips
- 1 (12″) prepared original crust pizza crust
- 1 cup pizza sauce
- 1/4 cup grated Parmesan cheese
- 8 oz shredded Mozzarella cheese
- 1 1/2 oz Chèvre (soft goat cheese)
Directions
- Preheat oven to 450°F.
- In a small bowl, mix together 1/8 cup EVOO, 1/4 tsp pink Himalayan salt, and 1 rounded tsp minced garlic – until well combined.
- Add thinly sliced 1 1/2 Roma tomatoes and stir gently to coat in EVOO mixture – then allow to marinate for 15 mins.
- Toward the end of the 15 mins, gently push tomato slices to the side of the bowl and add the thin strips from 6 basil leaves to marinade – stir gently to coat the basil strips, then promptly set them aside. I usually just leave The cutting board out from cutting the tomato and basil and set the marinated basil strips on it temporarily.
- Brush prepared 12″ pizza crust with EVOO mixture – try not to bruise your tomatoes!
- Brush 1 cup of pizza sauce onto crust, spreading evenly and out to about 1″ in from edge.
- Sprinkle evenly with 1/4 cup grated Parmesan cheese.
- Sprinkle evenly with 8 oz shredded Mozzarella cheese.
- Top with marinated tomatoes, evenly spaced.
- Top with Chèvre, evenly spaced.
- Bake according to crust package directions (usually about 10-15 mins) until cheese is fully melted and crust is golden and a bit crispy.
- Remove from oven then evenly placed the marinated basil strips across the top of the pizza.
- Allow to cool for 5 mins before slicing.
