Tomato, Basil & Chèvre Pizza Recipe

Ingredients
  • 1 (12″) prepared thin-crust pizza crusts
  • 1 cup pizza sauce
  • 8 oz shredded Mozzarella cheese
  • 1 1/2 Roma tomatoes, thinly sliced
  • 1/4 cup grated Parmesan cheese
  • 1/8 cup extra virgin olive oil (EVOO)
  • 1 1/2 oz Chèvre (soft goat cheese)
  • 1 rounded tsp minced garlic
  • 1/4 tsp pink Himalayan salt
  • 6 basil leaves, cut into thin strips
Directions
  1. Preheat oven to 450°F.
  2. In a small bowl, mix together 1/8 cup EVOO, 1/4 tsp pink Himalayan salt, and 1 rounded tsp minced garlic – until well combined.
  3. Add thinly sliced 1 1/2 Roma tomatoes and stir gently to coat in EVOO mixture – then allow to marinate for 15 mins.
  4. Brush prepared thin-crust pizza crust with EVOO mixture – try not to bruise your tomatoes!
  5. Brush 1 cup of pizza sauce onto crust, spreading evenly and out to about 1″ in from edge.
  6. Sprinkle evenly with 1/4 cup grated Parmesan cheese.
  7. Sprinkle evenly with 8 oz shredded Mozzarella cheese.
  8. Top with marinated tomatoes, evenly spaced.
  9. Top with Chèvre, evenly spaced.
  10. Bake according to crust package directions (usually about 10-15 mins) until cheese is fully melted and crust is golden and a bit crispy.
  11. Remove from oven then sprinkle evenly with thin strips from 6 basil leaves.
  12. Allow to cool for 5 mins before slicing.
