Tomato, Basil & Chèvre Pizza Recipe
Ingredients
- 1 (12″) prepared thin-crust pizza crusts
- 1 cup pizza sauce
- 8 oz shredded Mozzarella cheese
- 1 1/2 Roma tomatoes, thinly sliced
- 1/4 cup grated Parmesan cheese
- 1/8 cup extra virgin olive oil (EVOO)
- 1 1/2 oz Chèvre (soft goat cheese)
- 1 rounded tsp minced garlic
- 1/4 tsp pink Himalayan salt
- 6 basil leaves, cut into thin strips
Directions
- Preheat oven to 450°F.
- In a small bowl, mix together 1/8 cup EVOO, 1/4 tsp pink Himalayan salt, and 1 rounded tsp minced garlic – until well combined.
- Add thinly sliced 1 1/2 Roma tomatoes and stir gently to coat in EVOO mixture – then allow to marinate for 15 mins.
- Brush prepared thin-crust pizza crust with EVOO mixture – try not to bruise your tomatoes!
- Brush 1 cup of pizza sauce onto crust, spreading evenly and out to about 1″ in from edge.
- Sprinkle evenly with 1/4 cup grated Parmesan cheese.
- Sprinkle evenly with 8 oz shredded Mozzarella cheese.
- Top with marinated tomatoes, evenly spaced.
- Top with Chèvre, evenly spaced.
- Bake according to crust package directions (usually about 10-15 mins) until cheese is fully melted and crust is golden and a bit crispy.
- Remove from oven then sprinkle evenly with thin strips from 6 basil leaves.
- Allow to cool for 5 mins before slicing.
