Tomato Basil Grilled Cheese Recipe

  1. Heat griddle/skillet to medium low heat.
  2. Sprinkle 1/4″ tomato slices from 1 large tomato with 1/4 teaspoon kosher salt.
  3. Place on paper towel-lined plate for 10 mins.
  4. Butter the outside of each bread slice w/ 1 1/2 tsp of butter.
  5. Place 2 slices of bread (buttered side down) then layer in order on each: 1 oz sliced sharp cheddar, 1/2 of tomato slices, 1 oz grated Gruyère, and 1/4 tsp dried basil.
  6. Place 2 slices of bread (buttered side up) on top of the sprinkled basil.
  7. Transfer the sandwich to the griddle/skillet and cook over medium low heat, until the bottom slice of bread is golden brown and the cheese is starting to melt.
  8. Flip sandwich on griddle and continue cooking, until the top (now bottom) slice of bread is golden brown and the cheese is melted.
  9. Repeat Steps 6 & 7 for the remaining sandwich (unless your griddle/skillet is big enough to do them both at once!).
