

Tomato Basil Grilled Cheese Recipe

Ingredients
- 1 large tomato, sliced to 1/4″ thickness
- 1/4 tsp kosher salt
- 2 Tbsp butter (divided)
- 4 slices sourdough bread
- 2 oz sharp cheddar cheese, sliced
- 2 oz Gruyère cheese, grated
- 1/2 tsp dried basil (divided), or more to taste
Directions
- Heat griddle/skillet to medium low heat.
- Sprinkle 1/4″ tomato slices from 1 large tomato with 1/4 teaspoon kosher salt.
- Place on paper towel-lined plate for 10 mins.
- Butter the outside of each bread slice w/ 1 1/2 tsp of butter.
- Place 2 slices of bread (buttered side down) then layer in order on each: 1 oz sliced sharp cheddar, 1/2 of tomato slices, 1 oz grated Gruyère, and 1/4 tsp dried basil.
- Place 2 slices of bread (buttered side up) on top of the sprinkled basil.
- Transfer the sandwich to the griddle/skillet and cook over medium low heat, until the bottom slice of bread is golden brown and the cheese is starting to melt.
- Flip sandwich on griddle and continue cooking, until the top (now bottom) slice of bread is golden brown and the cheese is melted.
- Repeat Steps 6 & 7 for the remaining sandwich (unless your griddle/skillet is big enough to do them both at once!).
