

Hubby wanted peanut butter cookies (of which I’m not typically a big fan). So… I spruced them up w/ honey and butterscotch chips.
Played around w/ a few versions to get a preferred consistency and these are gold!
TIPS: You can also chill the dough and then cut it like in my Smør Cookies (Danish Butter Cookies) recipe if you’re not ready to bake right after prepping dough!
Tres Dulces Cookies Recipe

Ingredients
- 2 large eggs, at room temperature
- 3 cups all purpose flour
- 1 cup honey
- 1 cup creamy peanut butter
- 1 cup sugar
- 1/2 cup shortening
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp pink Himalayan salt
Directions
- Preheat oven to 350° F.
- Cover baking sheets w/ parchment paper and set aside.
- In a small bowl, lightly beat 2 eggs, then set aside.
- In a large bowl, mix 1 cup honey, 1 cup peanut butter, and 1/2 cup shortening until well combined.
- Add 2 beaten eggs and mix until well combined.
- In another large bowl, whisk together 3 cups flour, 1 cup sugar, 1 1/2 tsp baking soda, 1 tsp baking powder, and 1/2 tsp salt.
- Slowly, while continually mixing on low-medium speed, add flour mixture into egg mixture, then mix (at medium-high speed) until well combined.
- Scoop into dough balls using a 1 Tbsp cookie scoop and drop onto baking sheets.
- Bake for 10-12 mins.
- Allow to cool on baking sheets for 5 mins then transfer to wire racks to
cool completely.
