Turkey Koftas

I’ve been wanting to try these for a while, but my husband wasn’t sure about them so I held off. He finally capitulated, but he’s not a fan of Mediterranean flavors like I am.

Very tasty!

The best news… hubby says he’s happy to BBQ them up for me any time I want!!!

Served initially w/ my Garlic Cheese Herbed Cauliflower Crown.

TIP: To make Turkey Keftedes instead (using IP), roll into meatballs, add 1/2 cup of no salt added chicken broth to IP’s inner pot, place meatballs on IP’s trivet, seal lid, then select PRESSURE COOK (or MANUAL) for 8 mins with a 5 min natural release (NR).

Turkey Koftas Recipe

Ingredients
  • 1 lbs 93% lean ground turkey
  • 1/2 medium yellow onion, diced
  • 1/4 cup breadcrumbs
  • 1/4 cup curly parsley, finely chopped
  • 1 Tbsp mint leaves, finely chopped
  • 1/2 tsp smoked paprika
  • 1/2 tsp pink Himalayan salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp ground cumin
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
Directions
  1. Soak 6 wooden skewers in water for at least 30 mins.
  2. In a large bowl, mix together 1 lb lean ground turkey, diced 1/2 medium yellow onion, 1/4 cup breadcrumbs, 1/4 cup finely chopped curly parsley, 1 Tbsp finely chopped mint leaves, 1/2 tsp smoked paprika, 1/2 tsp pink Himalayan salt, 1/4 tsp ground black pepper, 1/4 tsp ground cumin, 1/8 tsp ground allspice, and 1/8 tsp cinnamon – until well-combined.
  3. Using a measuring cup, scoop out just over 1/3 cup at a time and form 6 oval-shaped koftas.
  4. Set in refrigerator to chill for at least 30 minutes and as long as overnight. I place them on the cutting board that we’ll use to transfer them to the barbecue.
  5. Once done chilling, thread 1 soaked wooden skewer (lengthwise) though each kofta .
  6. Preheat BBQ to high heat.
  7. Place koftas on grill, equally spaced, then reduce temperature to medium and cook for 8 mins.
  8. Flip each kofta and continue cooking for about 7 mins, until each kofta has reached 165° F.
