Tuscan Soup Recipe

Ingredients
  • 1 Tbsp extra virgin olive oil (EVOO)
  • 1 sweet onion, diced
  • 1/8 tsp kosher salt
  • 1/8 tsp ground black pepper
  • 4 tsp minced garlic
  • 1 Tbsp tomato paste
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper
  • 1/4 tsp dried thyme
  • 1 (14.5 oz) can diced fire-roasted tomatoes
  • 2 (15.5 oz) cans cannellini beans, drained & rinsed
  • 4 cups vegetable stock
  • 6 Tbsp grated Parmesan cheese (divided)
  • 1 cup heavy whipping cream
  • 5 oz fresh spinach, trimmed of tails (5 oz is the after trimming weight)
Directions
  1. Heat a medium stock pot over medium heat on stovetop.
  2. Add EVOO and heat.
  3. Add diced 1 sweet onion, 1/8 tsp kosher salt, and 1/8 tsp ground black pepper – then sauté for 4 mins.
  4. Add 4 tsp minced garlic – then sauté for 1 min.
  5. Stir in 1 Tbsp tomato paste.
  6. Add 1 tsp dried basil, 1/2 tsp dried oregano, 1/4 tsp crushed red pepper, and 1/4 tsp dried thyme – then sauté for 4 mins.
  7. Add 1 (14.5 oz) can diced fire-roasted tomatoes, drained & rinsed 2 (15.5 oz) cans cannellini beans, and 4 cups vegetable stock – cook for 2 mins.
  8. Slowly sprinkle in 4 Tbsp (1/4 cup) of grated Parmesan cheese, stirring constantly to help it start melting evenly.
  9. Bring to a boil, then reduce to a simmer (a 2.5 on my stove’s front, right burner) and
    cook for 10 mins.
  10. After 10 mins, cover and cook for 10 mins.
  11. After 10 mins, remove cover and set aside.
  12. Stir in 1 cup heavy whipping cream.
  13. Slowly sprinkle in the remaining 2 Tbsp of grated Parmesan cheese, stirring constantly to help it start melting evenly.
  14. Stir in 5 oz trimmed fresh spinach.
  15. Cook 5 mins, stirring frequently, until spinach is wilted.
