But, also, oh, the sweet onion!!
Chock full of cannellini beans and spinach…

Tuscan Soup Recipe

Ingredients
- 1 Tbsp extra virgin olive oil (EVOO)
- 1 sweet onion, diced
- 1/8 tsp kosher salt
- 1/8 tsp ground black pepper
- 4 tsp minced garlic
- 1 Tbsp tomato paste
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp crushed red pepper
- 1/4 tsp dried thyme
- 1 (14.5 oz) can diced fire-roasted tomatoes
- 2 (15.5 oz) cans cannellini beans, drained & rinsed
- 4 cups vegetable stock
- 6 Tbsp grated Parmesan cheese (divided)
- 1 cup heavy whipping cream
- 5 oz fresh spinach, trimmed of tails (5 oz is the after trimming weight)
Directions
- Heat a medium stock pot over medium heat on stovetop.
- Add EVOO and heat.
- Add diced 1 sweet onion, 1/8 tsp kosher salt, and 1/8 tsp ground black pepper – then sauté for 4 mins.
- Add 4 tsp minced garlic – then sauté for 1 min.
- Stir in 1 Tbsp tomato paste.
- Add 1 tsp dried basil, 1/2 tsp dried oregano, 1/4 tsp crushed red pepper, and 1/4 tsp dried thyme – then sauté for 4 mins.
- Add 1 (14.5 oz) can diced fire-roasted tomatoes, drained & rinsed 2 (15.5 oz) cans cannellini beans, and 4 cups vegetable stock – cook for 2 mins.
- Slowly sprinkle in 4 Tbsp (1/4 cup) of grated Parmesan cheese, stirring constantly to help it start melting evenly.
- Bring to a boil, then reduce to a simmer (a 2.5 on my stove’s front, right burner) and
cook for 10 mins. - After 10 mins, cover and cook for 10 mins.
- After 10 mins, remove cover and set aside.
- Stir in 1 cup heavy whipping cream.
- Slowly sprinkle in the remaining 2 Tbsp of grated Parmesan cheese, stirring constantly to help it start melting evenly.
- Stir in 5 oz trimmed fresh spinach.
- Cook 5 mins, stirring frequently, until spinach is wilted.
