Two Bean Chili Recipe
Ingredients
- 2 (15.5 oz) cans low sodium black beans, drained but not rinsed
- 2 (15.5 oz) cans red kidney beans, drained and rinsed
- 2 cups low sodium vegetable broth, divided
- 2 (10 oz) cans diced tomatoes with green chilies (don’t drain!)
- 1 (15 oz) tomato sauce
- 1 large green bell pepper, chopped
- 1 yellow onion, chopped
- 1 Tbsp chili powder
- 1 Tbsp minced garlic
- 1 Tbsp extra virgin olive oil (EVOO)
- 1 1/4 tsp ground cumin
- 1 tsp paprika
- 1/4 tsp ground black pepper
- 1/4 tsp pink Himalayan salt
Directions
- Heat 1 Tbsp of EVOO in a large skillet over medium heat on stovetop.
- Add chopped 1 bell pepper and chopped 1 onion to skillet and sauté for 3 mins.
- Add 3 tsp garlic to skillet and continue to sauté for 30 secs.
- Add 2 cans tomatoes with green chiles, 1 can tomato sauce, 1 cup of low sodium vegetable broth, 1 Tbsp chili powder, 1 1/4 tsp cumin, 1 tsp paprika, 1/4 tsp pink Himalayan salt, and 1/4 tsp ground black pepper.
- Bring to a boil over high heat.
- Return to medium heat, stir in drained (but not rinsed) 2 (15.5 oz) cans low sodium beans and drained (and rinsed) 2 (15.5 oz) cans red kidney beans.
- Cook for 10 minutes uncovered, stirring occasionally.
- Add remaining 1 cup of low sodium vegetable broth.
- Cook for at least 20 minutes – My total cook time in this step is usually somewhere around 30-40 mins, because we like our chili thick!
