Veggie Omelette Recipe

Ingredients
- 3 large eggs
- 1 Tbsp heavy whipping cream
- 1/16 tsp kosher salt
- 1/16 tsp ground black pepper
- 1 oz extra sharp cheddar cheese, shredded (divided)
- 1 Tbsp butter
- 2 Tbsp yellow onion, diced
- 2 Tbsp red bell pepper, diced
- 2 Tbsp tomatoes, diced
- 2 Tbsp spinach, chopped
Directions
- In a medium bowl, whisk together 3 large eggs and 1 Tbsp heavy whipping cream, until well-combined.
- Stir in 1/16 tsp kosher salt, 1/16 tsp ground black pepper, and 1/2 oz shredded extra sharp cheddar cheese.
- Heat a small skillet over medium heat on stovetop.
- Add 1 Tbsp butter and melt.
- Add 2 Tbsp diced yellow onion and 2 Tbsp diced red bell pepper, then sauté for 2 mins, until beginning to soften.
- Add 2 Tbsp diced tomatoes and 2 Tbsp chopped spinach and give a quick stir.
- Add egg mixture and cook until almost firm, then lower heat to low.
- Sprinkle evenly with remaining 1/2 oz shredded extra sharp cheddar cheese.
- Gently fold one side of omelette over the other. I use 2 rubber spatulas to accomplish this. One to fold and one to anchor the other side so it’s not escaping me in the pan!
- Cook until no more liquid is running anywhere – just about 30 secs should do it.
