This salad recipe has been tweaked over the years from a recipe I talked out of MIke Schlotman years ago. That man can make you a meal to die for and I fell in love with his version at a BBQ at his place and had to have the recipe. Changes and variations abound with family preference over the years.
Hubby isn’t a fan of them in this salad – but… I personally think the mandarin oranges MAKE this salad so will strongly recommend trying it with them!
TIPS: Try subbing in Feta Cheese instead of Bleu Cheese. Or switch out the Champagne Vinaigrette for a French Vinaigrette or Raspberry Vinaigrette.
Vinaigrette Salad Recipe
Ingredients
- 4 oz baby spinach
- 4 oz spring mix
- 1 (15 oz) can mandarin oranges, drained
- 5 oz grape tomatoes (Cherubs)
- 5 oz bleu cheese crumbles
- 4 oz Girard’s Champagne Vinaigrette Dressing
Directions
- In a large bowl, toss 4 oz spinach and 4 oz spring mix in 4 oz dressing.
- Sprinkle with – in order: 5 oz bleu cheese crumbles, then 5 oz tomatoes, and then 15 oz mandarins.
