I’m once again experimenting with desserts like yesterday’s Chai Chia Pudding and this creamy dream tonite.

πŸŠπŸ‡πŸŒπŸ« Topped with a version of my Honey Vanilla Rainbow Fruit Salad in pic above. πŸ˜‹

TIP: Adjust the flavor as desired by subbing out the vanilla extract for a different pure extract such as:

  • Almond
  • Lemon
  • Maple
  • Orange
  • Pumpkin Pie Spice

NOTE: You can whisk this by hand, but it won’t be as smooth. Using whole-milk ricotta in this recipe will give you an even creamier version.

Whipped Ricotta Recipe

Ingredients
Directions
  1. To a food processor, add 1 cup part-skim milk ricotta cheese, 2 Tbsp honey, and 1/2 tsp pure vanilla extract and process until very smooth. Mine takes about 1 min.
  2. Cover and refrigerate at least 1 hr (a few hours really helps the flavors to come together).
  3. Before serving, give a quick stir.
