I use my stand mixer for most of my recipes and did for this one, but I always give instructions of how to do by hand for those of you who don’t have access to this fun toy.
Hubby helped manage the cake flipping.
These were so good!!! Hubby thought they were a bit rich, but really enjoyed them.
I topped mine w/ sour cream. Yum!!!
You can make your patties any size you prefer. Just keep them thin. And, remember that the larger the diameter, the harder to flip in one shot. I tend to try to keep mine to no more than 4″ in diameter.
I serve these w/ Caesar Salad…
Zucchini Patties Recipe
Ingredients
- 2 cups zucchini, shredded
- 2 eggs, beaten
- 1/2 small red onion, diced
- 1/2 cup almond flour
- 1/2 cup freshly shredded Mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 Tbsp extra virgin olive oil (EVOO)
Directions
- Combine 2 cups shredded zucchini, 2 beaten eggs, diced 1/2 red onion, 1/2 cup almond flour, 1/2 cup shredded Mozzarella, and 1/2 cup grated Parmesan in a medium bowl then mix until well combined.
- Heat 2 Tbsp EVOO in a large skillet over medium-high heat on stovetop.
- Working in batches, scoop zucchini mixture into hot oil and fry until golden brown, about 2 mins per side.
- Remove patties from pan and drain on paper towels (preferably over paper plate to ease clean up).
