Before I crafted my Chicken Salad Wraps recipe I had never had chicken salad in my life that I’m aware of.

This Black Bean Chicken Salad was crafted as a sandwich version to lower the sodium per serving from what was in the tortillas I used in the original version. 😏 😋

Black Bean Chicken Salad Sandwich Recipe

Directions
  1. In a medium bowl, whisk together 1/8 tsp ground black pepper, 1/8 tsp + 1/16 tsp ground cumin, 1/8 tsp + 1/16 tsp chili powder, and 1/8 tsp + 1/16 tsp smoked paprika.
  2. Add 2 Tbsp plain nonfat Greek yogurt, 2 Tbsp low-fat cottage cheese, 1 1/2 tsp lime juice and whisk until well-combined.
  3. Add drained 4.5 oz can chunk chicken breast and stir until well-coated.
  4. Add 3 Tbsp no salt added black beans, 2 Tbsp diced red bell pepper, 1 Tbsp chopped cilantro, and 1 Tbsp diced sweet onion, then stir until well-coated.
  5. Cover (lid or cling-wrap) and refrigerate for at least 30 mins before serving.
  6. Scoop filling onto on slice of toasted sandwich bread then top with second slice of toasted sandwich bread.
