Oh, yum!!!
My boys aren’t typically fans of mustard, but this one is ah-mazing (IMO). And SUPER easy and quick.
So… I’ll be keeping this one in MY rotation.
I initially served this dish w/ my Roasted Brussels Sprouts & a Caesar Chopped Salad.
Balsamic Honey Mustard Chicken Recipe
Ingredients
- 2 lbs boneless, skinless chicken breast (thin-cut & trimmed)
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil (EVOO), divided (2Tbsp for vinaigrette + 2 Tbsp for cooking chicken)
- 1 Tbsp honey
- 1 Tbsp spicy brown mustard
- 2 tsp minced garlic
- 1/4 tsp freshly ground sea salt
- 1/8 tsp freshly ground black pepper
- 1/8 tsp crushed red pepper
Directions
- In a small bowl, whisk together 1/4 cup balsamic vinegar, 2 Tbsp EVOO, 1 Tbsp honey, 1 Tbsp spicy brown mustard, 2 tsp minced garlic, and 1/8 tsp crushed red pepper, until well combined – then set aside this vinaigrette.
- Heat a large skillet over medium heat on stovetop.
- Add remaining 2 Tbsp EVOO and heat.
- Season chicken breasts equally and on both sides with total of 1/4 tsp salt and 1/8 tsp black pepper.
- Place seasoned chicken breasts into skillet and sear until golden, about 4 mins per side.
- Pour vinaigrette over chicken and continue cooking until chicken is cooked through and vinaigrette has thickened a bit (about 5 mins), basting chicken with vinaigrette throughout the process (see bottom left pic above).
