Blackened Rockfish

My boys say they could eat this multiple times a week. Not a fan of fish w/ bones myself but this was worth it b/c this was definitely my favorite non-salmon recipe to-date! 😋

I initially served this dish w/ my Roasted Brussels Sprouts and an Italian salad.

Blackened Rockfish Recipe

Ingredients
  • 4 (6 oz) Rockfish filets
  • 1 Meyer lemon, cut into 8 wedges
  • 2 Tbsp avocado oil
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
Directions
  1. In a large shallow plate, whisk together 1 tsp paprika, 1 tsp kosher salt, 1/2 tsp dried oregano, 1/2 tsp black pepper, 1/2 tsp dried thyme, 1/4 tsp cayenne pepper, 1/4 tsp garlic powder, and 1/4 tsp onion powder until well combined.
  2. Pat dry with paper towels 4 (8 oz) Rockfish filets.
  3. Place each filet – flesh side down – into seasoning mixture, coating generously.
  4. Heat a large skillet over medium-high heat on stovetop.
  5. Add 2 Tbsp avocado oil and heat. When oil is hot, tilt skillet to evenly coat bottom of
    skillet with the oil
  6. Add fish filets – flesh side down – and cook until a blackened crust has formed (about 6 mins).
  7. Flip filets onto skin side and press down slightly to ensure an even contact with skillet, then continue cooking until filets are fully cooked (completely opaque and flake easily), about 3 mins.
  8. Plate filets and serve with 2 lemon wedges.
