My boys say they could eat this multiple times a week. Not a fan of fish w/ bones myself but this was worth it b/c this was definitely my favorite non-salmon recipe to-date!
I initially served this dish w/ my Roasted Brussels Sprouts and an Italian salad.
Blackened Rockfish Recipe
Ingredients
- 4 (6 oz) Rockfish filets
- 1 Meyer lemon, cut into 8 wedges
- 2 Tbsp avocado oil
- 1 tsp paprika
- 1 tsp kosher salt
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp freshly ground black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Directions
- In a large shallow plate, whisk together 1 tsp paprika, 1 tsp kosher salt, 1/2 tsp dried oregano, 1/2 tsp black pepper, 1/2 tsp dried thyme, 1/4 tsp cayenne pepper, 1/4 tsp garlic powder, and 1/4 tsp onion powder until well combined.
- Pat dry with paper towels 4 (8 oz) Rockfish filets.
- Place each filet – flesh side down – into seasoning mixture, coating generously.
- Heat a large skillet over medium-high heat on stovetop.
- Add 2 Tbsp avocado oil and heat. When oil is hot, tilt skillet to evenly coat bottom of
skillet with the oil - Add fish filets – flesh side down – and cook until a blackened crust has formed (about 6 mins).
- Flip filets onto skin side and press down slightly to ensure an even contact with skillet, then continue cooking until filets are fully cooked (completely opaque and flake easily), about 3 mins.
- Plate filets and serve with 2 lemon wedges.
