In my house, everyone chooses their own dressing so I don’t toss the salad until it’s individually plated.
My kid had never had a cobb salad before. He came out raving that the eggs and bacon *made* it. Hubby and I thought it was delicious.
Takes a lot of prep and effort to make at home if you do it all at once, but it’s so much better than restaurant. And… much of it (bacon, chicken, eggs) can be prepped in advance!
Thanks to my boys for making a last-minute run for ripe avocados!
NOTE: Nutrition Facts don’t include dressing information as you’re choosing your own and they can really vary in nutrition data. Honestly, this salad is far from dry so you don’t really even need dressing, IMO!
Cobb Salad Recipe
Ingredients
- 1 head Romaine lettuce, chopped
- 12 oz (pre-cooked weight) cooked bacon bits (see my Bacon Bits recipe)
- 12 oz cooked chicken breast, shredded (see my Shredded Chicken recipe)
- 1 (10 oz) carton of grape tomatoes
- 2 medium avocados, sliced
- 4 large hardboiled eggs, sliced (see my Hardboiled Eggs recipe)
- 1/2 cup bleu cheese crumbles
- 1/2 cup dressing of choice (check your dressing label to see if it’s friendly to your eating plan friendly, if that matters to you)
Directions
- In a large bowl, add 1 chopped head lettuce, 12 oz cooked chicken, and 10 oz tomatoes.
- Add 1/2 cup dressing and toss to combine. My husband and I use bleu cheese but the kid likes ranch. This is also amazing w/ a balsamic vinaigrette!
- Layer in order: 4 sliced hardboiled eggs, 2 sliced avocados, 1/2 cup bleu cheese crumbles, then 12 oz bacon bits.
