French Toast Waffles Recipe
Ingredients
- 2 large eggs, divided
- 2 cups all-purpose flour
- 1 2/3 cups fat free milk
- 1/3 cup virgin unrefined coconut oil, melted
- 2 Tbsp granulated sugar
- 1 Tbsp baking powder
- 1 tsp ground cinnamon
- 1 tsp pure vanilla extract
- 1/2 tsp pink Himalayan salt
- Extra virgin olive oil (EVOO) spray
Directions
- Spray waffle iron w/ EVOO then preheat to 400° F.
- In a large bowl, whisk together 2 cups all-purpose flour, 2 Tbsp granulated sugar, 1 Tbsp baking powder, and 1/2 tsp pink Himalayan salt.
- Separate yolks from whites from 2 large eggs and set aside.
- In a small bowl, whisk together 2 large egg yolks, 1 2/3 cups fat free milk, 1/3 cup melted coconut oil, and 1 tsp pure vanilla extract, then set aside.
- In a medium bowl, beat on medium-high speed 2 large egg whites until stiff peaks form.
- Add egg yolk mixture to flour mixture and stir until well combined. Don’t overmix the batter (you want it somewhat lumpy).
- Gently fold in the beaten egg whites.
- Pour batter slowly onto greased waffle iron until most of the lower griddle plate is covered – but leave some space for spread when you close the iron!
- Close iron and cook for about 4 mins, until each waffle reaches desired *doneness*.
