French Toast Waffles Recipe

Ingredients
  • 2 large eggs, divided
  • 2 cups all-purpose flour
  • 1 2/3 cups fat free milk
  • 1/3 cup virgin unrefined coconut oil, melted
  • 2 Tbsp granulated sugar
  • 1 Tbsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • 1/2 tsp pink Himalayan salt
  • Extra virgin olive oil (EVOO) spray
Directions
  1. Spray waffle iron w/ EVOO then preheat to 400° F.
  2. In a large bowl, whisk together 2 cups all-purpose flour, 2 Tbsp granulated sugar, 1 Tbsp baking powder, and 1/2 tsp pink Himalayan salt.
  3. Separate yolks from whites from 2 large eggs and set aside.
  4. In a small bowl, whisk together 2 large egg yolks, 1 2/3 cups fat free milk, 1/3 cup melted coconut oil, and 1 tsp pure vanilla extract, then set aside.
  5. In a medium bowl, beat on medium-high speed 2 large egg whites until stiff peaks form.
  6. Add egg yolk mixture to flour mixture and stir until well combined. Don’t overmix the batter (you want it somewhat lumpy).
  7. Gently fold in the beaten egg whites.
  8. Pour batter slowly onto greased waffle iron until most of the lower griddle plate is covered – but leave some space for spread when you close the iron!
  9. Close iron and cook for about 4 mins, until each waffle reaches desired *doneness*.
