Garlic Herb Buttered Cod

I’ve also made this recipe successfully by subbing out the cod for barramundi or tilapia, but cod is definitely my favorite (especially since my *new* kitchen now has a fan over the stovetop!). And… check out my Pan-seared Salmon for suggestions of using my Garlic Herb Butter Compound w/ salmon!

TIPS: Make this recipe Paleo or Whole30 by subbing out the butter for ghee!

Garlic Herb Buttered Cod Recipe

Ingredients
  • 3 (4 oz) cod filets
  • 3 Tbsp garlic herb butter (see my Garlic Herb Butter Compound recipe)
  • 2 Tbsp extra virgin olive oil (EVOO)
  • 1/8 tsp freshly ground black pepper
  • 1/8 tsp freshly ground sea salt
Directions
  1. Pat cod filets dry with a paper towel.
  2. Season both sides of each filet with 1/8 tsp black pepper and 1/8 tsp salt.
  3. Heat a large skillet over medium-high heat on stovetop.
  4. Add 2 Tbsp EVOO and heat.
  5. Add filets and cook for about 3 mins, until they are golden brown on the bottom.
  6. Reduce heat to medium, flip filets and top each with an equal amount of 3 Tbsp Garlic Herb Butter Compound, then continue cooking for about another 4 mins.
  7. As filets cook, spoon melted butter compound back over the filets.
  8. Plate filets and drizzle with melted butter compound.
