This dressing stars in my Insalata di Pasta and Parmesan Vinaigrette Salad recipes. Toss it with salads, roasted veggies, whole grains, and more!

NOTE: You REALLY want to plan in advance and make this dressing at least a day ahead so that the flavors come together instead of just tasting vinegar-y!

Parmesan Vinaigrette Recipe

Ingredients
  • 6 Tbsp extra virgin olive oil (EVOO)
  • 3 Tbsp lemon juice
  • 3 Tbsp grated Parmesan cheese
  • 3 Tbsp white wine vinegar
  • 1 1/2 tsp honey
  • 1 1/2 tsp dried oregano
  • 1 tsp minced garlic
  • 3/4 tsp Dijon mustard
  • 3/4 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
Directions
  1. In a salad dressing jar with sealing lid with , whisk together 6 Tbsp EVOO, 3 Tbsp lemon juice, 3 Tbsp grated Parmesan cheese, 3 Tbsp white wine vinegar, 1 1/2 tsp honey, 1 1/2 tsp dried oregano, 1 tsp minced garlic, 3/4 tsp Dijon mustard, 3/4 tsp dried thyme, 1/2 tsp kosher salt, 1/4 tsp ground black pepper until well-combined.
  2. Refrigerate overnight to fully marinate.
