Zesty Veggie Pizza Recipe

Zesty Pizza Sauce Ingredients
  • 9 oz crushed tomatoes
  • 3/4 tsp minced garlic
  • 3/4 tsp extra virgin olive oil
  • 1/4 tsp sea salt
  • 1/2 tsp crushed red pepper
Topping Ingredients
  • 18 spinach leaves, trimmed of stems (washed and patted dry)
  • 3 thin slices of a large vine-ripened tomato, quartered 
  • 1/4 cup grated Parmesan cheese
  • 4 Tbsp yellow onion, diced
  • 3 Tbsp Black Olives, sliced
Veggie Marinade Ingredients
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp minced garlic
  • 1/8 tsp sea salt
Directions
  1. In a medium glass or ceramic bowl, mix together zesty pizza sauce: 9 oz crushed tomatoes, 3/4 tsp minced garlic, 3/4 tsp EVOO, 1/4 tsp sea salt, 1/2 tsp crushed red pepper then cover and set in fridge to marinate overnight (or at least 3 hours).
  2. When ready to make pizza, preheat oven according to crust package instructions.
  3. In a small bowl, mix together veggie marinade: 2 Tbsp EVOO, 1/2 tsp minced garlic, and 1/8 tsp sea salt, until well combined.
  4. Add 18 spinach leaves, trimmed of stems (washed and patted dry) and 3 thin slices of a large vine-ripened tomato, quartered.
  5. Stir gently to coat in EVOO mixture – then allow to marinate for 15 mins.
  6. Gently transfer marinated tomatoes and spinach to a cutting board.
  7. Brush prepared pizza crust with remaining veggie marinade.
  8. Add 4 Tbsp diced yellow onions to veggie marinade bowl, stirring a bit to pick up the remnants of veggie marinade, then set aside.
  9. Brush marinated zesty pizza sauce onto crust – over veggie marinade – spreading evenly and out to about 1/2″ in from edge.
  10. Sprinkle evenly with 1/4 cup grated Parmesan cheese.
  11. Sprinkle evenly with 8 oz shredded Mozzarella cheese.
  12. Top with 4 Tbsp sightly marinated diced yellow onion, evenly spaced.
  13. Top with marinated spinach, evenly spaced.
  14. Top with 3 tbsp sliced olives, evenly spaced.
  15. Top with marinated tomato quarters, evenly spaced.
  16. Bake according to crust package directions, until cheese is fully melted and crust is golden.
  17. Remove from oven and allow to cool for 5 mins before slicing.
