I’ve had this recipe in mind for what seems like a long time but never tried it out. Recently, it’s because we’re only eating 1 night a week of beef or pork and hubby normally wants to grill up something he’s craving as those are the only 2 meats he really seems to get excited about.

Last night we agreed that shredded beef tacos might be a good change in our menu planning so I had a reason to cook up this base recipe.

Consider this a starter recipe and add seasonings of choice to make a rub to add to the already included salt, such as adding 2 tsp of one of the following, depending on your desired flavor palate and intended use of the shredded beef:

Ingredients
  • 2 lb boneless chuck roast, cut into large pieces and trimmed of excess fat
  • 1 cup low sodium beef broth
  • 1 Tbsp extra virgin olive oil
  • 4.8 g (1 tsp) kosher salt
Directions
  1. Select SAUTÉ – NORMAL on Instant Pot (IP).
  2. Add 1 Tbsp extra virgin olive oil and heat 1 min
  3. While extra virgin olive oil is heating, rub 4.8 g (1 tsp) kosher salt (and any other seasonings you’re adding – I recommend no more than 1 Tbsp to start and not to exceed 2 Tbsp) all over chuck roast pieces.
  4. Add seasoned chuck roast pieces to inner pot of IP and sear for 2 mins.
  5. Flip chuck roast pieces to a 2nd side and sear for 2 mins.
  6. Flip chuck roast pieces to 3rd side and sear for 2 mins.
  7. Select CANCEL.
  8. Pour 1 cup low sodium beef broth over seared chuck roast pieces.
  9. Close lid, set to SEAL, and select PRESSURE COOK (or MANUAL) for 35 mins.
  10. When cooking cycle completes, allow a natural release (NR) for 15 mins, then do a quick release (QR), setting to VENT, of any remaining pressure.
  11. Remove lid (aware from you) and transfer cooked beef to a large bowl and shred with 2 forks.
