I wanted to craft a savory cornbread recipe for our Thanksgiving meal this year. Inspired by my Sweet Skillet Cornbread & Shortcut Herb Biscuits, this is de-licious!

Still with just a bit of sweetness and more cake-like than grainy – just how we like it…

Savory Skillet Cornbread Recipe

Ingredients
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 cup 1.5% buttermilk
  • 1 cup cornmeal
  • 1/3 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 Tbsp baking powder
  • 2 tsp dried minced onion
  • 1 1/2 tsp dried parsley
  • 1 tsp dried dill weed
  • 1/4 tsp kosher salt
  • Baking spray 
Directions
  1. Preheat oven to 375 F.
  2. Spray a 10” iron skillet with baking spray, then set aside.
  3. In a large bowl, whisk together 1/3 cup honey and 1/2 cup melted butter, until starting to get fluffy (about 1 min). 
  4. Add 2 eggs and 1 cup 1.5% buttermilk, mixing until well blended.
  5. Mix in 1 Tbsp baking powder, 2 tsp dried minced onion, 1 1/2 tsp dried parsley, 1 tsp dried dill weed, and 1/4 tsp kosher salt, continually mixing until well blended. Keep on a lower speed or even do by hand.
  6. Slowly add 1 cup flour, 1 cup cornmeal, continuously mixing until well blended.
  7. Pour batter into skillet. Use a rubber spatula to get it all, then spread evenly in the skillet.
  8. Bake for 25 mins, until a toothpick inserted in the center comes out moist, but clean.
