I wanted to craft a savory cornbread recipe for our Thanksgiving meal this year. Inspired by my Sweet Skillet Cornbread & Shortcut Herb Biscuits, this is de-licious!
Still with just a bit of sweetness and more cake-like than grainy – just how we like it…
Savory Skillet Cornbread Recipe
Ingredients
- 2 large eggs
- 1 cup all-purpose flour
- 1 cup 1.5% buttermilk
- 1 cup cornmeal
- 1/3 cup honey
- 1/2 cup unsalted butter, melted
- 1 Tbsp baking powder
- 2 tsp dried minced onion
- 1 1/2 tsp dried parsley
- 1 tsp dried dill weed
- 1/4 tsp kosher salt
- Baking spray
Directions
- Preheat oven to 375◦ F.
- Spray a 10” iron skillet with baking spray, then set aside.
- In a large bowl, whisk together 1/3 cup honey and 1/2 cup melted butter, until starting to get fluffy (about 1 min).
- Add 2 eggs and 1 cup 1.5% buttermilk, mixing until well blended.
- Mix in 1 Tbsp baking powder, 2 tsp dried minced onion, 1 1/2 tsp dried parsley, 1 tsp dried dill weed, and 1/4 tsp kosher salt, continually mixing until well blended. Keep on a lower speed or even do by hand.
- Slowly add 1 cup flour, 1 cup cornmeal, continuously mixing until well blended.
- Pour batter into skillet. Use a rubber spatula to get it all, then spread evenly in the skillet.
- Bake for 25 mins, until a toothpick inserted in the center comes out moist, but clean.
