I’ve had this recipe in mind for what seems like a long time but never tried it out. Recently, it’s because we’re only eating 1 night a week of beef or pork and hubby normally wants to grill up something he’s craving as those are the only 2 meats he really seems to get excited about.
Last night we agreed that shredded beef tacos might be a good change in our menu planning so I had a reason to cook up this base recipe.
Consider this a starter recipe and add seasonings of choice to make a rub to add to the already included salt, such as adding 2 tsp of one of the following, depending on your desired flavor palate and intended use of the shredded beef:
Shredded Beef Recipe
Ingredients
- 2 lb boneless chuck roast, cut into large pieces and trimmed of excess fat
- 1 cup low sodium beef broth
- 1 Tbsp extra virgin olive oil (EVOO)
- 1 tsp sea salt
Directions
- Select SAUTE – NORMAL on Instant Pot (IP).
- Add 1 Tbsp EVOO and heat 1 min
- While EVOO is heating, rub 1 tsp sea salt (and any other seasonings you’re adding) all over chuck roast pieces.
- Add seasoned chuck roast pieces to inner pot of IP and sear for 2 mins.
- Flip chuck roast pieces to a 2nd side and sear for 2 mins.
- Flip chuck roast pieces to 3rd side and sear for 2 mins.
- Select CANCEL.
- Pour 1 cup low sodium beef broth over seared chuck roast pieces.
- Seal lid and select PRESSURE COOK (or MANUAL) for 35 mins.
- When cooking cycle completes, allow a natural release for about 15 mins, then do a quick release of any remaining pressure.
- Transfer cooked beef to a large bowl and shred with 2 forks.
